Frozen Tiramisu Squares
1 cup Original Bisquick® mix
1/2 cup sugar
1/3 cup baking cocoa
1 tablespoon instant espresso coffee (dry)
1/3 cup butter or margarine, melted
2 packages (8 oz each) cream cheese, softened
1 can (14 oz) sweetened condensed milk
1/4 cup frozen (thawed) orange juice concentrate
1 teaspoon instant espresso coffee (dry)
1 tablespoon hot water
1/4 cup chocolate-flavored syrup
1 1/2 cups whipping (heavy) cream
Baking cocoa, if desired
Step 1. Heat oven to 350ºF. Spray 13x9-inch pan with cooking spray. In medium bowl, mix Bisquick mix, sugar, 1/3 cup cocoa, 1 tablespoon coffee and the butter until crumbly. Crumble mixture lightly into pan. Bake 6 minutes; cool.
Step 2. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in milk. Place about 2 cups of the cream cheese mixture in separate bowl. Add juice concentrate to cream cheese mixture in one bowl. Dissolve 1 teaspoon coffee in hot water; stir coffee mixture and chocolate syrup into cream cheese mixture in other bowl.
Step 3. In chilled medium bowl, beat whipping cream on high speed until stiff. Fold half of the whipped cream into each cream cheese mixture. Cover and refrigerate chocolate mixture. Spoon orange mixture over crust.
Step 4. Freeze crust with orange mixture about 1 hour or until firm. Spread chocolate mixture evenly over orange mixture. Freeze about 4 hours or until firm. Let stand 10 minutes at room temperature before serving. For squares, cut into 5 rows by 3 rows. Sprinkle each serving with cocoa. Store covered in freezer.

Cranberry Delight

1 c. cranberries chopped
3/4 c. sugar
1/2 c. water
1/4 c. chopped walnuts
2 T. orange marmalade
1- 8oz. pkg. cream cheese softened
1/3 c. powdered sugar
1 T. milk
1 t. vanilla extract
1 c. heavy cream whipped
In saucepan combine cranberries sugar and water. Simmer 20 min.Stir in nuts and marmalade. Set aside to chill in refrigerator. Mix cream cheese powdered sugar milk and vanilla until smooth. In separate bowl beat cream until peaks form. Fold in to cream cheese mixture.Spread cream cheese mixture into pie pan. Spoon cooled cranberry mixture over top.Chill overnight.Enjoy!

Amish Beef Stew

* 2-3 lbs boneless beef cubes (calculated for 2 lbs.)
* 2 tablespoons shortening
* 1 large onion sliced
* 4 cups boiling water
* 1 tablespoon salt
* 1 tablespoon lemon juice
* 1 tablespoon sugar
* 1 tablespoon Worcestershire sauce
* 1/2 teaspoon pepper
* 1 1/2 teaspoons paprika
* 1 dash allspice
* 1 dash clove
* 6 carrots peeled and cut into chunks or 1 lb peeled baby carrot
* 6 potatoes peeled and cut into chunks
* 1/2 cup cold water
* 1/4 cup flour
1. Melt shortening over high heat in a large pot or dutch oven. 2. Add beef cubes and brown over medium heat stirring occasionally about 15-20 minutes. 3. Add onions boiling water salt lemon juice sugar worcestershire sauce pepper paprika allspice and cloves. 4. Simmer tightly covered for about 2 hours stirring occasionally. 5. Add vegetables and simmer another 30 minutes (covered) or until tender. 6. Note: if your lid is not tight on the pot you may not have enough liquid left to just about cover everything after you add the veggies. 7. If this is the case add more water to barely cover ingredients. 8. Mix cold water and flour together and blend until smooth. 9. Push meat and veggies to the side of the pot and add flour mixture slowly incorporating into liquid. 10. When gravy thickens stir all ingredients gently to distribute gravy evenly. 11. Simmer another 5 or 10 minutes and enjoy!
