One Pot Goulash

Description: 

Delicious comfort meal you can have on the table in no time flat with the use of a pressure cooker. It cooks so fast you won't even have time to search for those carry-out pizza menus.

Ingredients: 

5 oz. extra lean ground sirloin
1 cup each chopped bell pepper and onion
1/2 tsp. salt
4 oz. dry elbow macaroni
28 oz. whole tomatoes with juice

Directions: 

Brown burger with onion and peppers with 1 Tbsp. olive oil in your pressure cooker. Remove from cooker and drain. Return to cooker with macaroni salt and water( 1 cup). Stir well to coat all ingredients. Add tomatoes. DO NOT STIR AS THIS COULD STICK TO THE BOTTOM OF THE POT AND SCORCH. Lock the lid of your pressure cooker and bring up to pressure (15 lbs). Cook 5 minutes. Quick release under cold water. Stir macaroni to seperate pieces. Cover with lid for 5 minutes. Serve.

Ratatouille with ground turkey

30 Minutes to Prepare and Cook

Ingredients: 

1 medium eggplant cubes skin on or off(about 1 1/2 pounds)
2 small zucchini (about 1/2 pound)
8 cups fresh spinach
1 medium onion finelly chopped (about 1/2 cup)
4 medium tomatoes each cut into fourths
1 pound ground turkey browned
1/4 cup olive oil
5 cloves garlic chopped
5 grams fresh Oregeno
1 to 2 teaspoons salt
1/4 teaspoon pepper

Directions: 

Cook and stir all ingredients until heated through. Cover and cook over medium heat stirring occasionally until vegetables are crisp-tender about 10 minutes. 6 to 8 servings.
