chocolate peanutbutter cheesecake

65 Minutes to Prepare and Cook

Ingredients: 

15 oz ricotta prt skim
8 lg eggs
6 oz whipped cream cheese
1-2/3rd cup whey low
1/3 cup peanut butter crunchy
2 oz baking chocolate-melted and stir in
2 tbls cocoa dry
2 servings whey protein chocolate
1/4 cup warm water
1 tbls vanilla
topping: 1/2 chopped pecans
1 tbls whey low
1 tsp cinnamon ...mix all and crumble over cheesecake before baking.

Directions: 

Bake @ 340 for 15 min. on convection than bake another 20-30 min @ 325 on regular bake.; Serves 14, Place following ing in large bowl and whip till smooth and creamy: 15 oz ricotta prt skim; 8 lg eggs; 6 oz whipped cream cheese; 1-2/3rd cup whey low, 1/3 cup peanut butter crunchy, 2 oz baking chocolate, 2 tbls cocoa dry, 2 servings whey protein chocolate, 1 tbls vanilla, Pour above mixture in greased 9x13 pan. Banana Bread

Sweet Low Fat Treat with Fibre

Ingredients: 

1/2 cup sweetened applesauce
1/2 cup splenda for baking
2 eggs beaten
1 cup quick cooking oatmeal
1 cup flour
1 tsp baking soda
1/4 cup chopped walnuts
3 bananas (ripe)

Directions: 

Preheat oven to 350 degrees. Mash bananas until creamy and add other ingredients in order listed. Coat a loaf pan with cooking spray. Pour in mixture and bake for 1 hour or until golden brown and a toothpick inserted comes out clean. ENJOY!!!

Apple Oven Pancake

Was looking for a way to use some apples & make a quick breakfast for my son & his friend. Remembered having something like this at a Bed and Breakfast years ago. Best eaten straight out of the oven!

Ingredients: 

6 eggs
1 c 2% Milk
1 c White Whole Wheat Flour
1.5 c Apples
2 Tbsp butter

Directions: 

Preheat oven to 450 F. Put apples slices & butter into oven proof skillet in oven while heating up stir occaisionally. Combine eggs Milk and flour in a blender or food processor until slighty whipped. Pour egg mixture over eggs. Cook at 450 for 15 min then reduce heat to 375 and cook for another 10 minutes or until brown.

Crustless Low-Carb Spinach Quiche

Description: 

This is a great low-carb recipe and can be eaten hot or cold. Reheats easily for a quick on the go breakfast or can be served as a cold appetizer. Simple and delicious!

Ingredients: 

1/2 to 1 cup diced onion
1 - 16 oz. package frozen spinach - THAWED
Garlic to taste
8 large eggs
1/2 cup 2 % cottage cheese
2 cups cheddar cheese
Salt & Pepper to taste

Directions: 

Makes 8 servings (1/8 of a 9 X 13 baking dish) Preheat oven to 350 Degrees. Saute' onion & garlic add thawed spinach and cook until most of the moisture is gone. Blend eggs & cottage cheese and salt & pepper to taste. Add to spinach mixture along with two cups of cheddar cheese. Mix and pour into 9 X 13 greased pan. Bake for 30 minutes until done around edges and a little moist in the center. Can be served hot or cold. Great to reheat for a quick morning on the go breakfast or serve in smaller pieces for a cold appetizer.

Spaetzle German Noodles

Description: 

A delightful wavy German Noodle tha goes great with schnitzle.

Ingredients: 

*Flour white 1 cup
Milk 2% .5 cup
Egg fresh 1 large
Salt 1 tsp

Directions: 

Beat ingredients well until batter shows bubbles. Pour batter into spaetzle maker over simmering water and squeeze batter into water. Let rise to top skim them out drain and rinse under cold water.
