Cabbage Soup

Description: 

This is a delious hearty cabbage soup that is big on taste low on calories!

Ingredients: 

1 tbsp. Olive Oil
8 oz. ham cubed
1 c. onion chopped
1/3 head of cabbage shredded
6 baby carrots shredded
1 c. frozen shredded potatoes
1/2 c. lentils
5 c. chicken broth
1 c. sauerkraut
1 bay leaf
1 tsp. dill

Directions: 

Heat olive oil in dutch oven. Add ham and heat for 5 min. Add onion and saute about 2 min. Add cabbage shredded potato and shredded carrot and saute until cabbage is wilted. Add chicken broth bay leaf and lentils. Bring to a boil and let boil uncovered about 10min. Lastly rinse sauerkraut and sqeeze water out then add to pot along with dill. Makes 6 servings.; ;

Garlic Lime Chicken

Ingredients: 

1 lb chicken breast
1/2 cup lime juice
1 1/2 cup chicken broth
2 tablespoons olive oil
3 tsp minced garlic
1/2 teaspoon thyme
salt/pepper
1 1/2 cup brown rice

Directions: 

Combine all ingredients except the rice in crockpot. Cook on low 8-10 hours. Add rice to crockpot and cook for an additional 15 minutes.

Chicken Curry in a Hurry

Description: 

If you like curry you'll love this dish. The sauce tastes great over couscous or rice!

Ingredients: 

1/2 medium Vidalia (sweet) onion chopped
2 tsp olive oil
2 cloves garlic pressed
1 tsp ground ginger
1 Tbsp curry powder
1 Tbsp honey
1/2 cup low fat coconut milk
3/4 cup low sodium chicken broth
4 boneless skinless chicken breast halves (4 oz each)

Directions: 

Heat the oil in a large skillet over medium heat; saute onions and garlic until they are almost translucent (about 2-3 minutes). Add ginger and curry powder. Next add honey, coconut milk and chicken broth. Reduce heat and cook for 2-3 minutes, add chicken breast halves. Simmer until chicken is cooked through. (about 20-25 minutes) Flip chicken after about 10 minutes to cook other side through.
